Tapas is a Spanish dining tradition whose beginnings allegedly began when Spanish king Alphonso the 10th fell ill and was forced to eat small bites of food with wine between meals. His recovery technique so impressed him that he decreed no wine was to be served in any of the inns in the land, unless accompanied by something to eat. Thus, jars of wine were served topped with breads, meats and cheeses, and the tapa was born.

Tapas has evolved over the years, growing from a peasant tradition of between-meal nibbling into a full-fledged dining experience. Instead of small slabs of bread and cheese, modern diners share samplings of eclectic flavors from a variety of cultures. Multiple small portioned items are served in place of entrees, and guests are urged to dine community style if they want to get the most out of their experience.
