For years I have wondered how folks prepare the carp, buffalo, gar, sucker, drum, etc., that I have given away. When I was a kid I once tasted carp "patties" that were much like the salmon patties my mother fried, but I really didn't know how the fish was prepared, other than it was pressure cooked first.
Anyway, I don't know if there is much interest in this but here is a link to a .pdf file (Adobe Acrobat Reader needed fo view it) from the Arkansas Game and Fish Commission with recipes and methods of preparing these "rough" fish.
