Bob Sanford's recipe
Place a layer of fillets on the bottom of a glass baking dish. Season with pepper and your favorite flavored salt (garlic or whatever). Spread a half-inch layer of sour cream on top of the fillets, then liberally shake parmesan on top of that. Repeat with another layer of crappie, sour cream and parmesan until at least three layers or 3-4 inches thick. Bake 30 minutes or so at 350.
Some folks add a layer of crushed, seasoned croutons to the very top.
