You are almost completely out of luck. The state stocks rainbows below Smith Lake Dam and you can catch a few there, but it is deep water, not wadeable. The rest of the water in the state is too warm. There is, or was, a small trout farm near Fort Payne where a cold stream comes out of Sand Mountain, but I don't know of any else. If you're hung up on trout, count on trips to North Georgia or East Tennessee.
There's plenty of good fishing here, but not trout.
