Lance--the best time for a BIG fish is usually from late Feb to early April, all depending on water temp. You can catch more, bigger fish when they are pre-spawn and feeding aggressively. I saw some 5lb+ fish caught in early feb last year, and the fishing was good till about the 2nd week in april (then the fish started to bed heavily).
Once they go on bed the fishing slows considerably, but if you are very patient you can find a monster--just be ready to accept less than 3-5 bites(not counting drum, cats, etc) if you are drifting the bed areas in april/may.
Usually late september/early october can produce some good fish too.
