I'd first like to say I am no fisheries biologist, but I do have my own theories about consuming catfish. I have eaten catfish from a variety of Alabama waters and can tell you not all fish taste the same, even from the same river. In my opinion catfish are like any other creatures of habit and often have picky diets if what they want is available. I believe fish from areas behind dams actually taste a little better because they can be more choosey in their diet of fresh fish. For the same reason Yellow cats taste better, these finicky fish will also. Water quality also plays a major role on taste, but my favorite catfish to eat would be from the lower Mobile Delta because when the brackish water pushes up I believe it cleans the fish out, and I have eaten fish from many areas of the Alabama River and there is no comparison.
