Its a tad boney, but just slice the fillets up and down, and the grease will slide into the slices and fry them bones up. They are popular in LA, thats where I learned it from, but they also dine on garpike, carp, drum, and grinnel.
You also can poach the meat and add in with bread crumbs, green onion and shredded cheese for TT patties. Gar cooks well the same way.
They say drum is as tasty as Walleye/Sauger.
