Red, I wasn't thinking when I said I cut the heads off. Its pointless when you filet a fish, if anything the head gives you something to hold on to. I normally start up near the head behind that fin and cut down at an angle till I reach the backbone and go all the way down to the tail fin. I think its easier to start at the head than the tail, more to hang on to and easier to get the cut started deep enough. I've both left the skin on and cut it off, and unless you have some picky people eating I do think it better to leave it on and save all the meat.
