I cut the head off and filet them. You can actually leave the skin on one side if its a small trout, normally that saves a little meat. I've never heard about pulling the backbone like Bud described, but it sounds like an idea worth trying. Even without doing that though, most of the bones in a trout are pretty small. They're one of my favorite fish to eat.
