I recently tried blackened crappie and its awesome. Get a cast iron pan extremely hot on the grill. Season both sides of the crappie fillet in paul prudhomme's seafood magic then before you go to the pan dip the fillet in butter. Cook each side for about 25 - 30 seconds and you are done. Its easy, the fish holds together and tastes great. Do this outside or the wife will make you sleep outside as it smokes alot while cooking.
