So how does eating way too much hot chili loaded food make you feel? It is pretty intangible, but here's my description of a Chinese chili-oil experience:

I went to that Chinese place in Alberta city. Had some Mongolian beef, with a side order of chili-oil. Imagine crushed red pepper mixed with sesame oil.   Usually they give you just a little, but this time I got about an ounce of it.  I put it ALL on my food, and carefully stirred it into the steaming hot beef, diakon, celery, broccoli, and Hunan peppers.  My plate had a good, red speckled look, punctuated with the occasional Hunan pepper.  I looked at my creation, had I ruined it?  No, I NEEDED it like that.  I am addicted, I can't help myself.

There was such harmony between the spicy beef, sweet diakon, and fiery chili-oil.  The heat starts slowly, like a heavy cast iron burner taking its time to heat up.  As the chili-oil soaks into the rest of the plate of steaming food, its intense flavor gains potency.  By this time my mouth is completely hot, and I can feel it in my throat.  So hot, incredibly mercurial, but completely wonderful. I'm not completely full yet, this was my first meal of the day. The last quarter of the serving was absolutely glowing. Like the incandescent exhaust system on my turbocharged engine as it's reaching maximum power, the chili oil was really well mixed into these last few bites.

After finishing up, bussing my table and leaving I sat in the car, still lit up like a red hot turbine housing.  Enjoying it.  The intense, sharp heat in my mouth was diffusing into a softer glow, giving way to the relaxed full feeling after a good meal.

By now, I could feel the warmth in my stomach.  Starting off distant but concentrated. Well defined right at the bottom of my ribcage.  Like the heat of a 100 watt lightbulb a few inches away.  Deep, and pleasant. As the compounds of the food began to break down, and dissolve, the heat became less concentrated, started to diffuse through the rest of my internal organs, washing them in that relaxed, deep, warm feeling I so like. Over the next couple hours as the remaining compounds of the chili-oil break down into their simplest components, the heat slowly disappears. Leaving me satisfied, but already thinking about what kind of daringly hot dish I'll opt for tomorrow...
